A fine dining restaurant which opened this summer has been included in the latest edition of the Michelin Guide.
Elements in Bearsden is the first solo dining venture for Gary Townsend, who spent six years as the head chef at the city’s One Devonshire Gardens.
His career has also involved working in kitchens such as L’Enclume, Restaurant Sat Bains, Hibiscus and The Kitchin.
The new establishment on New Kirk Road is described by Michelin as a “smart neighbourhood restaurant in a very smart neighbourhood.”
“Elements occupies a swish, lavishly renovated premises blending royal blue fabrics with dark wood and gold furnishings,” added the guide.
“The kitchen applies classical techniques to top-quality Scottish ingredients, while incorporating some subtle international influences – West Coast langoustines combined with chawanmushi and vadouvan is a prime example.
“Each dish delivers an interesting range of flavours and textures, without ever being too showy in its makeup.
“The on-display wine is a nod to the well-stocked list featuring something for every palate and purse.”
Elements opened on July 11 in the former premises of Monadh Kitchen, which held a Michelin Bib Gourmand, and closed its doors in July 2023 with owners citing “the financial burden” as the reason for the closure.
In the months since, the new eatery, which aims to provide “an enticing and exploratory food experience, in a relaxed and welcoming setting,” has been winning rave reviews from locals.
It describes its offering as “an evolving tasting menu and la carte option for evening service, with the addition of a smaller four course menu at lunch”.
The current la carte menu features main dishes such as Highland roe deer with jerusalem artichoke, cep mushroom, elderberry, kale and sauce grand veneur, and St Brides Duck with yellow peach, duck fat potato, scottish girolles, crispy wing, brioche and maderia.
Announcing the news in social media page, a spokesperson for Elements said: “Today we heard that we have been included in the latest Edition of the @michelinguide.
“Beyond delighted, and a true testament to the huge effort of our wonderful employees both front and back of house.”
